Veggie Packed Breakfast Hash

Brunch time baby!! Quick and easy Trader Joe’s meal idea for brunch or dinner! This breakfast hash has all the goods – veggies, protein, & healthy fats. Trust me you won’t be disappointed. Use this meal as inspiration if you don’t have a Trader Joe’s near you.

Ingredients:
– Spinach
– Shaved Brussel Sprouts
– Roasted Potatoes
– Eggs
– Turkey Bacon

Directions:
1. Cook turkey bacon to your liking – let cool and chop in small pieces.
2. Sauté shaved Brussel sprouts with 1-2 tsp of olive or avocado oil until crispy.
3. Sauté spinach with 1-2 tsp of olive or avocado oil until wilted.
4. Cook the roasted potatoes over medium heat for 5-10 minutes.
5. Place Brussel sprouts, spinach, roasted potatoes in a 9×13 pan and toss together.
6. Place chopped bacon on top and put in a preheated oven (170-200) degrees Fahrenheit to keep it warm.
7. Cook eggs of choice.
8. Take out the greens and potato mixture & place the eggs on top.
9. Season how you would like!
