I am a huge SUCKER for apple crisp. I could eat it for breakfast, lunch, and dinner. But… a 9×13 pan of apple crisp is even hard to get through for an addict like me. This recipe is perfect for 1 or 2 for date night!
Filling:
- 2 Honey Crisp Apple
- 2 tbsp Brown Sugar
- 1 tbsp All Purpose Flour
- Few Shakes of Cinnamon
Topping:
- 1/4 cup All Purpose Flour
- 1/3 cup Old Fashioned Oats
- 2 tbsp Brown Sugar
- 1/2 tsp Vanilla Extract
- 3 tbsp Butter – Softened
Serves: 2
Instructions:
- Heat oven to 350 Degrees Fahrenheit.
- Spray two ramekins with cooking spray.
- Mix all the filling ingredients in a medium sized bowl.
- Separate the filling mixture into the two ramekins, set aside.
- Mix all the topping ingredients in a medium sized bowl. Add softened butter last! Smash butter into ingredients until crumbly.
- Divide topping evenly between both ramekins.
- Bake for 25-30 minutes – until top is golden. Mine is usually done around 27 minutes.
- Enjoy with whip cream, ice cream, or plain greek yogurt.
