THEY ARE HERE!! This recipe is perfect for a weekday breakfast – quick / easy and full of nutrient-dense ingredients. I never can get through a dozen muffins in time so this half-batch is perfect for those who need a delicious and fulfilling breakfast with zero food waste! You now have breakfast prepped and ready to go for Monday – Saturday which ends up being just right because we are obviously having pancakes on Sunday. 😋 These are also perfect for the morning workout crew – nothing better than a delicious pre-workout.
Ingredients:
- 2 tsp olive oil
- 1/4 cup maple syrup
- 1 tbsp milk – I used almond
- 1/2 tsp vanilla extract
- 1 egg
- 1/2 cup mashed banana (roughly a banana and a half)
- 1 cup almond flour
- 1 tsp baking soda
- 1 tsp ground flaxseed
- 1/2 tsp cinnamon
- 1 scoop vanilla protein powder (roughly 1/4 cup)
Serves: 6
Recipe:
- Heat oven to 325 degrees Fahrenheit.
- Combine olive oil, maple syrup, milk, & vanilla extract – whisk together.
- Add egg & mashed banana – whisk together.
- Add dry ingredients – almond flour, baking soda, ground flaxseed, cinnamon, & protein powder – stir.
- Place 6 liners in a muffin tin then spray with cooking spray.
- Divided batter evenly among the 6 muffin liners.
- Bake in preheated oven for 20-25 minutes – mine are perfect around the 23-minute mark.

Haley, I am anxious to try these! I am Gf, Df, EF, so I’ll have to sub an egg replacer but so think that will work. I’ll let you know, I plan on making them tomorrow😉
